Ingredients You’ll Need

 For the Bhaji (Curry):

  • 2 tbsp butter
  • 1 tbsp oil
  • 1 tsp cumin seeds
  • 1 medium onion (finely chopped)
  • 2 medium tomatoes (finely chopped)
  • 1 green capsicum (chopped)
  • 2 boiled potatoes (mashed)
  • ½ cup boiled peas
  • ½ cup boiled cauliflower (optional)
  • 2 tsp Pav Bhaji Masala
  • ½ tsp Kashmiri red chilli powder
  • ¼ tsp turmeric powder
  • Salt to taste
  • 1–2 tbsp tomato ketchup (optional for tanginess)
  • ½ cup water (adjust for consistency)
  • 1 tbsp butter (for finishing)

 For the Pav (Bread):

  • 8 pav buns
  • 2 tbsp butter
  • 1 tsp Pav Bhaji Masala

Step-by-Step Method

1. Cook the Vegetables

Boil potatoes, peas, and cauliflower until soft. Mash them lightly and set aside.

2. Prepare the Bhaji Base

In a large pan, heat butter and oil. Add cumin seeds and onions — sauté until golden brown.
Add chopped tomatoes and cook till soft and pulpy.

3. Add Spices & Vegetables

Mix in Pav Bhaji Masala, red chilli powder, turmeric, and salt.
Add the boiled vegetables and mash them together using a masher.
Pour in some water and let the bhaji simmer for 10–15 minutes on low flame.
Add a spoon of butter and mix well for that classic street-style flavor.

4. Toast the Pav

On a tawa, melt butter and sprinkle a pinch of Pav Bhaji Masala.
Place the buns (pav) and toast until golden on both sides.

5. Garnish & Serve

Serve hot bhaji topped with butter, chopped onions, lemon wedges, and coriander leaves.
